  • 8 to 10 medium red potatoes (2 lb.)
  • 1 (2 oz.) jar pimientos, chopped and drained
  • 1/2 c. chopped onion
  • 1/8 tsp. onion salt
  • 1/8 tsp. garlic salt
  • 1 lb. American cheese, cut into 1/2-inch cubes
  • 2 slices bread, cut in cubes
  • 1/4 c. oleo, melted

Directions

    Cook unpeeled potatoes in water until soft, but firm.

    Drain and cut into 1-inch cubes.

    Place in an ungreased 2 1/2-quart baking dish.

    Add pimientos, onion, garlic and onion salt.

    Toss gently.

    Sprinkle with cheese.

    Place bread cubes on top and pour oleo over.

    Bake uncovered at 350° for 30 minutes or until bread is toasted.
