- 8 to 10 medium red potatoes (2 lb.)
- 1 (2 oz.) jar pimientos, chopped and drained
- 1/2 c. chopped onion
- 1/8 tsp. onion salt
- 1/8 tsp. garlic salt
- 1 lb. American cheese, cut into 1/2-inch cubes
- 2 slices bread, cut in cubes
- 1/4 c. oleo, melted
Directions

1Cook unpeeled potatoes in water until soft, but firm.

2Drain and cut into 1-inch cubes.

3Place in an ungreased 2 1/2-quart baking dish.

4Add pimientos, onion, garlic and onion salt.

5Toss gently.

6Sprinkle with cheese.

7Place bread cubes on top and pour oleo over.

8Bake uncovered at 350° for 30 minutes or until bread is toasted.
