  • 2 1/2 c. self-rising flour
  • 4 eggs, separated
  • 1 c. crushed pineapple (8 oz.)
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 c. chopped pecans
  • 2 c. sugar
  • 1 1/2 c. oil

Directions

    Combine flour, sugar, oil, egg yolks, pineapple cinnamon and nutmeg in large bowl.

    Beat egg whites until stiff peaks form. Fold into batter.

    Fold in pecans.

    Pour into a 10-inch tube pan. Bake at 325° for 1 hour and 10 minutes, or until cake tests done. Let cool in pan.
