- 2 1/2 c. sifted self-rising flour
- 2 c. sugar
- 1 1/2 c. vegetable oil
- 4 egg yolks, beaten
- 1 c. crushed pineapple with juice
- 2 Tbsp. hot water
- 1 1/4 Tbsp. cinnamon
- 1 1/4 Tbsp. nutmeg
- 1 c. chopped pecans
- 4 egg whites, beaten until stiff
Directions

1Combine all ingredients in order except nuts and egg whites. Beat well.

2Add nuts and fold in beaten egg whites.

3Pour into greased tube pan or bake in two loaf pans or one in a 9 x 12-inch oblong pan.

4Bake in preheated 350° oven for 1 hour or a few minutes longer.

5Let cool in pan before turning out on plate. Cake is moist and good!
