- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups beef stock
- salt
- freshly ground black pepper
- 2 pounds potatoes Idaho white, peeled and cut
- 1/2 pound cheese curd fresh
Directions

1In a saucepan, over medium heat, combine the butter and flour.

2Stir until incorporated.

3Cook for 12 to 15 minutes for a dark roux.

4Stir in the stock.

5Season with salt and pepper.

6Bring the liquid to a boil.

7Reduce the heat to medium low and continue cooking for 15 to 20 minutes.

8Remove from the heat and keep warm.

9Peel the potatoes and cut fries, 4 inches by 1/2-inch.

10Bring a pot of salted water to a boil.

11Add the potatoes and blanch for 4 minutes.

12Remove, drain and cool completely.
