- 1 cup sugar
- 1/2 cup brown sugar
- 1/2 cup light cream (half&half)
- 3 tablespoons butter, unsalted
- 6 ounces pecans optional
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Directions

1In a saucepan over medium heat, combine the sugars, half and half and the butter.

2Using a heat resistant or wood spatula stir the mixture to 232AF.

3At 230AF add the remaining ingredients and stir to 237AF.

4Remove from heat and let the mixture cool undisturbed and uncovered to 214AF.

5At 212AF stir the mixture for a few seconds and drop tablespoons full on wax paper or on a silicone baking mat.

6Let harden.

7Note: If the mixture firms or becomes crystallized before it was dropped, reheat the mixture with a few drops of water.

8Let cool slightly and drop on wax paper.
