Prawn and Spinach Bake

- 6 ounces shrimp peeled
- 8 ounces potatoes peeled
- 8 ounces spinach fresh
- 1 each garlic cloves peeled
- 1 ounce butter or margarine
- 1 pinch nutmeg
- 1/2 ounce butter or margarine
- 1/2 ounce flour, all-purpose
- 5 ounces milk
- 2 ounces cheese grated
Directions

1If the prawns are frozen allow to defrost.

2Put the potatoes into a pan of boiling salted water, cook steadily for 10 minutes only then strain.

3Wash and trim the spinach, crush the garlic; slice the part-boiled potatoes.

4Melt the butter or margarine in a large pan, add the garlic, spinach and nutmeg and a little seasoning.

5Cook for 2 minutes then spoon into the base of a large shallow dish; top with the prawns.

6Preheat the oven.

7For the sauce: Melt the butter or margarine in a saucepan, add the flour and cook for 1 minute.

8Add the milk and bring to the boil, stir- ring or whisking briskly.

9Cook for 2 to 3 minutes.

10Remove from the heat, add halfthe cheese and season to taste.

11Pour the sauce over the prawns.

12Top with the sliced potatoes and the remaining cheese.

13Bake for 20 minutes or until golden brown.

14Serve with tomatoes and a green salad.
