- 115 g prawns
- 1 tablespoon fresh coriander
- 1 lemon, 2 tablespoons juice
- 1 -2 teaspoon curry powder
- 14 onion, finely chopped
- 1 garlic clove, finely chopped
- 2 teaspoons oil
- 13 cup long-grain rice, uncooked
- 1 14 cups chicken stock
- 3 medium mushrooms, sliced
- 14 cup frozen peas
Directions

1Place prawns in a dish and sprinkle with coriander, lemon juice and half the curry powder.

2Set aside to marinate.

3Place onion and garlic in a microwave-proof bowl with oil.

4Cook on high for about 1 minute.

5Add remaining curry powder and cook for 1 minute.

6Stir in rice with 1 cup of boiling stock.

7Cook on high for 4 minutes, stirring twice.

8Add mushrooms and cook for 1 more minute on high, stirring halfway through.

9Add prawns.

10Cook on high for 2 minutes.

11Add peas.

12Stir well and cook for a final 2 minutes.

13Serve with fresh coriander and low-fat yoghurt.
