- 6 slice prosciutto or smoked ham
- 3 tbsp. toasted onion mustard, or flavored mustard of choice
- Freshly ground black pepper
- 2 oz. mozzarella
- 1/4 c. matchstick strips red bell pepper
- 1/4 c. matchstick strips fresh fennel
- Fresh fennel fronds
Directions

1Place prosciutto slices on work surface; cut each in half lengthwise.

2Spread each strip with 3/4 teaspoon mustard, to cover; generously sprinkle with pepper.

3At narrowest end of prosciutto, place one strip each mozzarella, red pepper, and fennel.

4Roll up tightly to contain.

5Garnish with small frond fennel.

6Serve immediately, or cover with plastic wrap and refrigerate up to 3 hours.

7If refrigerated, let stand at room temperature 10 minutes before serving.
