- 4 French sandwich loaves
- 1/4 c. olive oil
- 1 Tbsp. red wine vinegar
- 2 tomatoes, thinly sliced
- 1 medium cucumber, thinly sliced
- 8 oz. sliced Provolone cheese
- 1 medium red onion, sliced thin
- 3 Tbsp. chopped parsley
- 1/2 tsp. chopped basil leaves
- 1/4 tsp. pepper
- 1 glove garlic, minced
Directions

1Slice loaves in half lengthwise.

2Brush cut sides of bread with olive oil (about 4 teaspoons).

3Combine remaining oil and vinegar and set aside.

4Arrange 1/4 of tomato on each bottom half. Brush with vinegar mixture.

5Arrange 1/4 of cucumber, cheese and onion over tomato.

6Brush with remaining vinegar mix.
