- 3 eggs
- 1 c. skim milk
- 2 Tbsp. melted butter
- 2/3 c. all-purpose flour
- 1/3 c. whole wheat flour
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- confectioners sugar (optional)
Directions

1In mixing bowl, beat eggs, milk and butter.

2Add flours, salt and cinnamon.

3Mix on low speed just until smooth.

4Fill greased muffin cups.

5Bake in preheated oven at 425° for 20 to 25 minutes or until firm, brown and lightly puffed.

6Sprinkle with confectioners sugar, if desired.

7Serve immediately.
