Ingredients

  • 1 1/4 c. whole wheat flour
  • 5 Tbsp. soy flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. cloves
  • 1/2 c. butter
  • 2/3 c. honey
  • 1 egg
  • 1 c. cooked pumpkin
  • 1 c. chopped walnuts
  • 1/2 c. chopped raisins
  • 1/2 c. chopped dates

Directions

    Mix dry ingredients.

    Separately, cream butter and honey; beat in egg until mixture is smooth.

    Stir in pumpkin.

    Add dry ingredients to pumpkin mixture, stir in nuts and dried fruits. Bake in 8 x 8-inch oiled pan at 350° for 25 minutes.
