  • BARS: 2 cups pumpkin, 4 beaten eggs, 1 cup vegetable oil (or applesauce), 2 cups flour, 1 cup brown sugar, 1 cup sugar, 1/4 tsp salt, 1 tsp each baking powder and soda, 1 1/2 tsp cinnamon, 1/2 tsp cloves, 1/2 tsp nutmeg
  • FROSTING: 3 oz softened cream cheese, 1/3 cup butter, 1/2 cup confectioners' sugar, 1/2 tsp vanilla, 1 1/2 tsp light cream

    Blend the pumpkin, eggs and oil in a bowl and set aside. I another bowl, mix all the dry ingredients and then mix with the pumpkin mixture. Pour into a greased square cake pan and bake in preheated 350F oven for 25 minutes. Remove from oven and cool to room temperature before putting on frosting.

    Cream the cheese with the butter until smooth. Put in the sugar, vanilla and light cream. Spread on pumpkin squares.
