Ingredients
- 3 1/2 c. flour
- 2 tsp. baking soda
- 2 tsp. salt
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1/2 tsp. ground ginger
- 3 c. sugar
- 1 c. oil
- 4 eggs
- 2 c. canned pumpkin
- 2/3 c. orange juice, milk or water
- 1 1/2 c. raisins
- 1 1/2 c. chopped nuts (optional)
Directions

1Combine flour, soda, salt, baking powder, cinnamon, nutmeg and ginger.

2Beat together sugar and oil and add eggs, one at a time. Stir in pumpkin and orange juice, or whatever liquid you want. Blend in dry ingredients.

3Stir in raisins and nuts.

4Turn into well-greased, floured loaf pans.

5Let stand at least 20 minutes before baking.

6Bake at 325° for 1 1/4 hours or until done.

7Let stand in pans for 5 minutes, then turn on racks to cool.
