- 1 3/4 cups flour
- 1 1/2 cups sugar
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup oil
- 1/3 cup water
- 2 eggs
- 1/2 teaspoon vanilla
- 1 cup pumpkin (canned version is best)
Directions

1Sift together all the dry ingredients into a bowl.

2Mix together all the wet ingredients (oil, water, eggs, vanilla, and pumpkin).

3Stir wet ingredients into the flour.

4Bake in greased loaf pan for 1 hour at 350.
