Pumpkin Bread

Ingredients

  • 5 cups flour
  • 3 teaspoons baking soda
  • 2 14 teaspoons salt
  • 1 12 teaspoons cinnamon
  • 1 12 teaspoons nutmeg
  • 1 12 cups oil
  • 6 eggs, beaten
  • 1 cup water
  • 3 cups pumpkin
  • 4 12 cups sugar

Directions

    Mix all ingredients together.

    Pour into buttered loaf pans.

    Bake at 350 for 40-60 minutes.

    Note: 3 Cups of pumpkin = 1 large can of pumpkin.

    I like to use 4 C unbleached all purpose flour and 1 C whole wheat flour.

    It just makes it a little bit healthier and doesn't change the texture of the bread.

    I always use a small portion of whole wheat flour in all of my baking.
