  • 1 c. sugar
  • 1/2 c. light brown sugar
  • 1 c. canned pumpkin
  • 1/2 c. salad oil
  • 2 eggs
  • 2 c. all-purpose flour
  • 1 tsp. soda
  • 1/2 tsp. each salt, nutmeg and cinnamon
  • 1/4 tsp. ginger
  • 1/2 c. chopped nuts
  • 1/4 c. water

Directions

    Combine sugars, pumpkin, oil and eggs; beat until well blended. Sift flour, soda, salt and spices together.

    Stir into pumpkin mixture.

    Stir in nuts and water; spoon into well oiled 9 x 5 x 3-inch loaf pan.

    Bake at 350° for 1 hour and 5 minutes or until bread tests done.

    Turn out on rack to cool.
