Pumpkin Butter

  • 3 1/2 c. cooked or canned pumpkin
  • 1 Tbsp. pumpkin pie spice
  • 1 (1 3/4 oz.) pkg. powdered fruit pectin
  • 4 1/2 c. sugar

Directions

    In a large saucepan, combine pumpkin, pumpkin pie spice and pectin; mix well.

    Stirring constantly, bring mixture to a boil. Quickly add the sugar.

    When the mixture returns to a boil, cook for 1minute.

    Remove from heat; skim off any foam.

    Ladle hot into jars, leaving 1/4-inch headspace.

    Adjust lids.

    Process in a boiling water bath for 10 minutes.

    Yield: about 3 pints.
