- 2 c. sugar
- 1 (16 oz.) can pumpkin
- 1 c. vegetable oil
- 4 eggs, beaten
- 2 c. all-purpose flour
- 1 tsp. salt
- 2 tsp. soda
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 c. flaked coconut
- 1/2 c. chopped nuts
Directions

1Combine sugar, pumpkin, oil and eggs.

2Beat 1 minute at medium speed of an electric mixer.

3Combine next 5 ingredients; add to pumpkin mixture.

4Beat one minute on medium speed.

5Stir in coconut and nuts.

6Pour mixture into three greased and floured 8-inch cake pans.

7Bake at 350° for 25 to 30 minutes.

8Cool in pans for 10 minutes.

9Remove from pans and cool completely before icing.

10Spread frosting between layers and on top.
