- 3 eggs
- 1 c. sugar
- 3/4 c. self-rising flour
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 2/3 c. pumpkin
- 1 tsp. lemon juice
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 c. chopped nuts
Directions

1Beat eggs on high 5 minutes.

2Gradually beat in sugar.

3Stir in pumpkin and lemon juice.

4Stir together in another bowl flour, baking powder, spices and salt.

5Fold dry ingredients into pumpkin mixture.

6Spread in a greased and floured 15 x 10-inch cake roll pan.

7Top with nuts.

8Bake for 15 minutes at 375°.

9Turn out on towel sprinkled with powdered sugar.

10Starting at narrow end, roll up and cool; unroll, spread filling and re-roll.
