- 3 eggs
- 1 c. sugar
- 2/3 c. pumpkin
- 1 tsp. juice
- 3/4 c. flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 2 tsp. ground ginger
- 1/2 tsp. salt
Directions

1Beat eggs at high speed for 5 minutes.

2Gradually beat in sugar, then pumpkin and lemon juice.

3Sift together the next 5 ingredients and mix in.

4Spread mixture onto a well-greased and floured cookie sheet.

6Sprinkle with 1 cup chopped nuts.)

7Bake at 375° for 15 minutes.

8Cool slightly and place on small towel which has been sprinkled evenly with powdered sugar. Roll and cool.

9Unroll and spread with Cream Cheese Frosting.

10Roll and chill completely.

11Sprinkle with confectioners sugar.
