- 3 eggs
- 1 c. granulated sugar
- 2/3 c. pumpkin
- 1 tsp. lemon juice
- 3/4 c. flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 1/2 tsp. ginger
- 1/2 tsp. salt
- 1 c. broken walnuts
- 8 oz. cream cheese
Directions

1Set out cream cheese to soften.

2Beat eggs on high speed for 5 minutes.

3Gradually beat in sugar.

4Stir in lemon juice and pumpkin.

5Fold in dry ingredients that have been sifted together. Spread onto sheet or jelly roll pan (15 x 10 x 1-inch), sprayed or greased and floured.

6Sprinkle nuts on top.

7Bake at 375° for 15 minutes.

8Turn out onto kitchen towel, sprinkled with powdered sugar.

9Roll up from narrow end, towel and cake together.

10Let roll cool for 30 minutes before making filling.
