- 1/2 c. light brown sugar
- 1/2 c. white granulated sugar
- 1 1/2 c. pumpkin puree
- 3 eggs
- 2/3 c. whole milk
- 1/2 tsp. salt
- 1/2 tsp. ginger
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 Tbsp. gelatin
- 1/4 c. cold water
Directions

1Soak the gelatin in the cold water. Separate the egg whites from the yolks.

2Combine the beaten egg yolks with the brown sugar, spices, milk and pumpkin and cook over boiling water until custardy.

3Dissolve the gelatin in the hot custard.

4Cool until it begins to stiffen.
