- 2 c. flour
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1/2 c. sugar
- 1 c. cornmeal
- 4 Tbsp. softened butter
- 2 eggs
- 2 c. pumpkin (15 oz. can) or fresh pumpkin, steamed until soft
- 1 small (8 oz.) can cream-style corn
Directions

1Preheat oven to 350°.

2Sift together flour, baking powder and salt.

3In separate bowl, combine sugar, cornmeal, butter and eggs and stir into flour mixture until blended.

4Add pumpkin and corn. Pour into greased and floured 9-inch loaf pan.

5Bake 1 hour or more (usually 1 1/4 hours) until center tests firm.

6Cool 15 minutes and remove from pan.

7Let sit several hours before slicing.

8This bread is delicious toasted with butter.

9Makes 1 loaf.
