- 1/2 whole Large Onion, Chopped
- 1 cup Canned Pumpkin
- 2 cups Cooked White Rice
- 2 whole Eggs, Beaten
- 2 Tablespoons Soy Sauce

11. Spray a medium to large size skillet with oil and heat over medium-high.

22. Cook onion in oil until slightly softened.

33. Add pumpkin and rice and stir well.

44. Push rice to one side of the pan and pour beaten eggs onto exposed skillet surface.
