  • 2 cups mashed cooked pumpkin

  • 3 cups flour

  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon clove
  • 1 teaspoon salt
  • 1 (3 1/2 ounce) package French vanilla instant pudding
  • 1 cup sugar
  • 1 cup milk
  • 1 cup shortening
  • 1 teaspoon vanilla

Directions

    Combine 2 cups sugar and eggs in mixer bowl; beat until thick and lemon colored.

    Add oil, pumpkin, and 1 teaspoon of vanilla; mix well.

    Add flour, baking soda, baking powder, cinnamon, ginger, cloves, and salt; mix well.

    Drop by teaspoonfuls on lightly greased cookie sheet.

    Bake at 350F for 12 to 15 minutes or until light brown.

    Remove to wire rack and cool.

    Combine pudding mix, 1 cup of sugar, milk, shorting, and 1 teaspoon of vanilla in mixer bowl.

    Beat until spreading consistency.
