- 4 eggs
- 3 c. sugar
- 1 c. peanut oil
- 1/3 c. water
- 1 (30 oz.) can pumpkin pie filling
- 1 c. chopped roasted peanuts
- 3 1/2 c. all-purpose flour
- 2 tsp. baking soda
- 1 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 1/2 c. (8 oz.) chopped dates
Directions

1Preheat oven to 350°.

2Grease three 9-inch loaf pans.

3In large bowl, beat eggs.

4Stir in sugar, oil, water and pumpkin; add in flour, soda, salt and cinnamon.

5Mix well.

6Stir in dates and peanuts.

7Pour 1/3 batter into each loaf pan.

8Bake for 1 hour or until bread pulls away from sides of pan.

9Cool on wire rack

10for 10 minutes.

11Yields 3 loaves, 18 servings.
