Pumpkin Nut Bread

Ingredients

  • 3 1/2 c. flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. ground cinnamon
  • 1/2 tsp. baking powder
  • 2 c. sugar
  • 2/3 c. shortening
  • 4 eggs
  • 1 (16 oz.) can pumpkin
  • 1/2 c. water
  • 1 c. chopped nuts

Directions

    Stir together flour, baking soda, cinnamon and baking powder; set aside.

    In a large bowl, beat sugar and shortening until fluffy. Add eggs, pumpkin and water; mix well.

    Stir in flour mixture and nuts.

    Turn into 2 greased loaf pans.

    Bake in a 350° oven for 55 - 60 minutes or until a wooden toothpick inserted in center comes out clean.

    Cool 10 minutes.

    Remove from pans. Cool completely.
