- 3 eggs
- 1 c. sugar
- 2/3 c. cooked pumpkin
- 1 tsp. lemon juice
- 3/4 c. plain flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. nutmeg
Directions

1Grease and flour 2 cookie sheets.

2Beat the eggs for 5 minutes, gradually adding the remaining ingredients in order listed.

3Spread mixture on cookie sheets and sprinkle finely chopped pecans on the rolls.

4Bake at 350° for 12 to 15 minutes. Take a cloth and sprinkle with powdered sugar; dump cakes on this and roll up.

5Cool 15 minutes.

6Unroll cakes and spread icing on them and roll back up; wrap in aluminum foil.

7Freeze and unthaw 20 minutes before serving.
