  • 1 3/4 c. flour
  • 1 tsp. soda
  • 3/4 tsp. salt
  • 3/4 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 c. sugar
  • 1/2 c. vegetable oil
  • 2 eggs
  • 1 c. canned pumpkin
  • 1/2 c. chopped pecans

Directions

    Combine dry ingredients; mix well.

    Make a well in center and add oil, eggs and pumpkin.

    Mix well; add the nuts.

    Spray two 8 x 4-inch loaf pans with no-stick cooking spray.

    Pour into pans, filling each 1/2 full.

    Bake at 350° for 1 hour or until a wooden toothpick inserted in the center of the loaf comes out clean. Yield:
