  • 9-inch single crust pastry
  • 2 eggs
  • 3/4 c. sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. ginger
  • 1/4 tsp. cloves
  • 16 oz. can (2 c.) canned or cooked pumpkin
  • 13 oz. can evaporated milk

    Heat oven to 425°.

    Prepare pastry.

    In a large bowl, beat eggs slightly.

    Add remaining ingredients and blend well.

    Pour into pastry lined pie pan.

    Bake at 425° for 15 minutes.

    Reduce oven temperature to 350° and bake 45 minutes or until knife inserted near center comes out clean.
