  • 2 eggs, beaten
  • 3/4 c. brown sugar
  • 1 1/2 c. pumpkin
  • 1/2 c. evaporated milk
  • 1/2 c. water
  • 1/4 tsp. ginger
  • 1/4 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 c. light cream

    To prepare pumpkin:

    Peel and deseed pumpkin; cut into pieces and boil until soft.

    Drain.

    Mash pumpkin.

    Preheat oven to 450°. In mixing bowl, mix all ingredients; stir.

    Put mixture into 9-inch pie shell.

    Bake for 10 minutes at 450°, then reduce the heat to 350° and bake for 30 minutes (or until firm).
