  • 2 c. cooked pumpkin
  • 4 eggs, separated
  • 1 c. sugar
  • 1 Tbsp. cornstarch
  • 1/2 tsp. ground cinnamon
  • 1/3 c. cream
  • 1/4 c. butter, melted
  • 1 tsp. whiskey

Directions

    Combine pumpkin, slightly beaten egg yolks and a mixture of sugar, cornstarch and cinnamon; beat 5 minutes.

    Mix cream, butter and whiskey.

    Beat egg whites until rounded peaks are formed. Fold into pumpkin mixture.

    Pour into pastry-lined 9-inch pie pan. Bake at 357° for about 45 minutes or until a silver knife comes out clean when inserted halfway between center and edge of filling.
