  • 3 eggs
  • 1 tsp. lemon juice
  • 3/4 c. all-purpose flour
  • 1/2 tsp. nutmeg
  • 1 tsp. soda
  • 1 c. sugar
  • 2/3 c. pumpkin
  • 1 tsp. ginger
  • 1/4 tsp. salt
  • 1 c. pecans

    Beat eggs on high for 1 minute, then add sugar, lemon juice, spices, salt and soda.

    Mix well, then fold flour and pumpkin in. Spread on greased cookie sheet, then sprinkle with nuts. Bake at 375° for 10 minutes. Turn out on towel and sprinkle with powdered sugar and roll up with towel.
