Ingredients

  • 3 eggs
  • 1 c. sugar
  • 2/3 c. pumpkin
  • 1 tsp. lemon juice
  • 3/4 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1 c. powdered sugar
  • 8 oz. cream cheese
  • 4 Tbsp. butter
  • 1/2 tsp. vanilla

Directions

    Beat eggs at high speed for 5 minutes.

    Gradually add 1 cup sugar, pumpkin and lemon juice.

    Blend together the flour, baking powder, cinnamon, ginger and nutmeg.

    Add to mixture and spread in greased and floured jelly roll pan.

    Bake at 375° for 15 minutes. Turn out on powdered sugared tea towel (cotton).

    Roll towel and cake together.

    Let cool 1/2 hour, then unroll and fill with mixture of 1 cup powdered sugar, cream cheese, butter and vanilla. Add to cake and re-roll.

    Sprinkle with sugar.
