  • 3 eggs
  • 1 c. sugar
  • 2/3 c. pumpkin
  • 1 tsp. lemon juice
  • 3/4 c. flour
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 8 oz. cream cheese
  • 4 Tbsp. margarine
  • 1 c. powdered sugar
  • 1/2 tsp. vanilla

Directions

    Preheat oven to 375°.

    Grease a 10 x 15-inch pan and line with wax paper.

    (If possible, use a 10 x 15-inch jelly roll pan.) Cream eggs and sugar together.

    Mix pumpkin, lemon juice and dry ingredients together and then add to egg-sugar mixture.

    Spread on greased and waxed paper-lined jelly roll pan.

    Bake for 15 minutes at 375°.

    Cool 15 minutes on towel.

    Mix cream cheese, margarine, powdered sugar and vanilla together and spread on cooled cake. Roll cake over filling until a log is formed.

    Slice into 1/2 to 1-inch slices.
