- 3 eggs, well beaten
- 1 c. sugar
- 2/3 c. pumpkin
- 1 Tbsp. lemon juice
- 3/4 c. flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
Directions

1Use jelly roll pan.

2Grease and flour pan.

3Whip eggs until thick and foamy.

4Add sugar gradually to eggs.

5Fold in pumpkin and lemon juice. Sift together all dry ingredients and fold into egg mixture, beating just until batter is smooth (can use electric mixer, low speed).

6Pour into pan.

7Bake 15 minutes at 375° or until cake springs back when touched lightly.

8Immediately loosen cake from edges of pan; invert on towel sprinkled with confectioners sugar.

9While hot, roll cake and towel from narrow end.

10Cool completely on wire rack.
