- 2/3 c. cooked mashed pumpkin or canned
- 3 eggs
- 1 c. sugar
- 1 tsp. lemon juice
- 3/4 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 Tbsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. nutmeg
- 1 c. walnuts, chopped
- powdered sugar
Directions

1Beat eggs at high speed for 5 minutes or until pale yellow. Gradually beat in sugar.

2Stir in pumpkin and lemon juice. Combine flour, baking powder, salt, cinnamon, ginger and nutmeg. Fold into pumpkin mix.

3Pour batter into greased and floured 15 x 10 x 1-inch jelly roll pan.

4Sprinkle with nuts.

5Bake at 375° for 15 minutes.

6Sprinkle powdered sugar on a towel.

7Loosen edges of cake and invert on towel.

8Roll cake and towel from narrow edges. Cool cake completely.

9Unroll and spread with filling.

10Reroll and chill.
