- 3 eggs
- 1 c. white sugar
- 2/3 c. pumpkin
- 1 tsp. lemon juice
- 3/4 c. flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
Directions

1Beat eggs for five minutes until fluffy.

2Add sugar.

3Stir in pumpkin and lemon juice.

4Mix together flour, baking powder, cinnamon, ginger, nutmeg and salt.

5Mix with pumpkin mixture. This will be thin.

6Pour on greased and floured cookie sheet. Sprinkle finely chopped nuts on top.

7Bake 15 minutes at 375°. While baking take clean dish towel and sprinkle with powdered sugar.

8Turn cake with nut side down.

9Roll up with towel until cool.

10Unroll and spread with filling and reroll without towel.
