- 2 Tbsp. butter
- 1 onion, diced
- 2 stalks celery, diced
- 1 carrot, diced
- 2 Tbsp. flour
- 1 c. canned or cooked pumpkin
- 3 c. chicken broth
- 1/8 tsp. white pepper
- pinch of sugar
Directions

1Melt 2 tablespoons of butter in a soup pot.

2Saute the onion. Add the diced celery and carrot.

3Cook a little, allowing the vegetables to glaze slightly.

4Remove from heat.

5Blend in 2 tablespoons of flour.

6Add pumpkin and stir.

7Gradually add chicken broth, white pepper and sugar.

8Bring to a boil, uncovered.

9Cover and simmer 30 minutes.

10Better with reheating.
