Ingredients
- 2 Tbsp. butter
- 1/2 Tbsp. flour
- 1 can chicken broth
- 2 c. milk (evaporated is richer)
- 1 c. sour cream (add after heat is off)
- 1/2 lb. onions, sliced
- 2 c. pumpkin
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. cinnamon
- 1/4 tsp. ginger
- dash of nutmeg
Directions

1Saute onion in butter until tan.

2Add flour to skillet, then process in food processor.

3Add chicken broth and pumpkin; puree. Add seasonings.

4Heat to boil.

5Stir; will stick.

6Reduce heat; simmer 15 minutes.

7If too thick add milk while simmering, or add at the end of simmer time.

8Remove from burner.

9Add sour cream. Serves 4.
