  • approximately 3 lb. piece pumpkin
  • 1 c. chicken broth
  • 1 onion
  • curry powder, salt and pepper to taste
  • 1 sweet pepper
  • 2 medium potatoes, diced
  • a single celery stalk
  • 1 garlic clove
  • 2 c. chicken broth

Directions

    Cook the first 5 ingredients in 2 cups of chicken broth; puree.

    In 1 cup chicken broth, cook potatoes, diced very small. Add curry, salt and pepper to taste.

    When potatoes are tender, add the puree.

    Spices may be added as desired.
