- 4 eggs
- 2 c. sugar
- 1 c. vegetable oil
- 1 (16 oz.) can pumpkin
- 2 c. all-purpose flour
- 2 tsp. baking powder
- 2 tsp. ground cinnamon
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cloves
- 1/2 c. raisins or more
- 1/2 c. chopped nuts (optional)
Directions

1Heat oven to 350°.

2Grease a 9 x 13-inch pan.

3Beat eggs, sugar, oil and pumpkin.

4Stir in flour, baking powder, cinnamon, baking soda, salt, ginger and cloves.

5Mix in raisins and nuts. Pour batter into pan.

6Bake until light brown, 25 to 30 minutes. Cool; cut into bars (2 x 1 1/2-inches).
