  • 1/2 c. (1 stick) unsalted butter (at room temperature) plus additional for the pan
  • 2 c. all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. grated nutmeg
  • 1 c. honey
  • 1 c. canned pumpkin puree
  • 2 eggs (at room temperature)
  • 2 tsp. lemon juice
  • 1 tsp. vanilla extract

    Preheat oven to 350°. Position rack in center of oven. Generously butter a 9 x 5-inch metal loaf pan and set aside. Sift flour, baking soda, salt, cinnamon, ginger and nutmeg into a medium bowl or onto a large sheet of waxed paper spread on work surface. Set aside.
