- 1/2 c. (1 stick) unsalted butter (at room temperature) plus additional for the pan
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. grated nutmeg
- 1 c. honey
- 1 c. canned pumpkin puree
- 2 eggs (at room temperature)
- 2 tsp. lemon juice
- 1 tsp. vanilla extract
Directions

1Preheat oven to 350°. Position rack in center of oven. Generously butter a 9 x 5-inch metal loaf pan and set aside. Sift flour, baking soda, salt, cinnamon, ginger and nutmeg into a medium bowl or onto a large sheet of waxed paper spread on work surface. Set aside.
