- 2 c. quahogs
- juice from quahogs
- 1 medium onion
- 1 (2-inch) square piece salt pork
- 2 medium potatoes
- 1 qt. milk
- 1 dollop heavy cream
- 4 tsp. butter
Directions

1Chop quahog meat, set aside.

2Cut the salt pork into small squares.

3Fry until golden brown.

4Remove pieces; save.

5Add chopped onion until golden brown.

6Chop potatoes and simmer in milk.

7Add quahogs and simmer in salt pork fat and onions.

8Add quahog juice, potatoes and milk.

9Heat and add dollop of cream. Serve with 1 teaspoon of butter.

10Better the next day.
