- 10 quail
- 2 tomatoes, chopped
- 1 large chopped onion
- 1 sweet chili
- 2 chopped garlic cloves
- 1 c. dry white wine
- 1/2 c. sherry
Directions

1Saute veggies in olive oil until onions are clear. Add spices such as sage to taste. Brown quail in olive oil and add to mixture with 1 cup dry white wine and 1/2 cup sherry.

2Cook in a 300° oven, covered, for 1 1/2 to 2 hours, slowly.

3Quail are done when legs and wings separate easily.

4Serves 6 to 8.
