- 1 Tbsp. butter
- 1 Tbsp. flour
- 1 pt. milk
- 1/4 c. shredded pimento
- 2 c. cooked quail, cut into small pieces
- salt to taste
- paprika to taste
- mace to taste
Directions

1Cook the butter and flour in saucepan for 2 minutes.

2Add the milk and mace until you have a smooth, creamy sauce.

3Stir into this the quail.

4Heat thoroughly.

5Add salt and paprika.

6Put generously on toasted slices of bread.

7Place shredded pimento on top and serve on a platter.
