  • 1 Tbsp. butter
  • 1 Tbsp. flour
  • 1 pt. milk
  • 1/4 c. shredded pimento
  • 2 c. cooked quail, cut into small pieces
  • salt to taste
  • paprika to taste
  • mace to taste

Directions

    Cook the butter and flour in saucepan for 2 minutes.

    Add the milk and mace until you have a smooth, creamy sauce.

    Stir into this the quail.

    Heat thoroughly.

    Add salt and paprika.

    Put generously on toasted slices of bread.

    Place shredded pimento on top and serve on a platter.
