  • 2 c. shredded Colby or Cheddar cheese
  • 6 (8 or 10-inches in diameter) flour tortillas
  • 2 Tbsp. canned chopped green chiles
  • 1 small tomato, chopped (1/2 c.)
  • chopped fresh parsley
  • 1/4 c. chopped green onion

Directions

    Heat oven to 350°.

    Sprinkle 1/3 cup of the cheese evenly over half of each tortilla.

    Top cheese with remaining ingredients.

    Fold tortilla over filling.

    Place on cookie sheet. Bake about 5 minutes or just until cheese is melted.

    Serve quesadillas whole or cut each into 3 wedges, beginning cuts from center of folded sides.
