- 2 c. shredded Colby or Cheddar cheese
- 6 (8 or 10-inches in diameter) flour tortillas
- 2 Tbsp. canned chopped green chiles
- 1 small tomato, chopped (1/2 c.)
- chopped fresh parsley
- 1/4 c. chopped green onion
Directions

1Heat oven to 350°.

2Sprinkle 1/3 cup of the cheese evenly over half of each tortilla.

3Top cheese with remaining ingredients.

4Fold tortilla over filling.

5Place on cookie sheet. Bake about 5 minutes or just until cheese is melted.

6Serve quesadillas whole or cut each into 3 wedges, beginning cuts from center of folded sides.
