Ingredients

  • 1 tsp. olive oil
  • 1 sliced onion
  • 1 sliced sweet green pepper
  • 1/2 tsp. ground cumin
  • 1 (15 oz.) can sliced chili beans, drained, save liquid
  • 1 pkg. (10 oz.) frozen corn
  • 4 oz. shredded Monterey Jack and Cheddar cheese
  • 4 (10 inch) flour tortillas

    Preheat oven to 450°.

    Heat oil to medium heat in nonstick pan.

    Add onion, green pepper and cumin.

    Cook 5 minutes sprinkling with bean liquid to prevent sticking.

    Stir in corn. Spoon green pepper mixture, beans and cheese on each flour tortilla.

    (Divide ingredients equally.)

    Fold tortillas over to enclose filling.

    Place in baking pan.

    Bake for 5 minutes at 450°.
