- 1 tsp. olive oil
- 1 sliced onion
- 1 sliced sweet green pepper
- 1/2 tsp. ground cumin
- 1 (15 oz.) can sliced chili beans, drained, save liquid
- 1 pkg. (10 oz.) frozen corn
- 4 oz. shredded Monterey Jack and Cheddar cheese
- 4 (10 inch) flour tortillas
Directions

1Preheat oven to 450°.

2Heat oil to medium heat in nonstick pan.

3Add onion, green pepper and cumin.

4Cook 5 minutes sprinkling with bean liquid to prevent sticking.

5Stir in corn. Spoon green pepper mixture, beans and cheese on each flour tortilla.

6(Divide ingredients equally.)

7Fold tortillas over to enclose filling.

8Place in baking pan.

9Bake for 5 minutes at 450°.
