  • 4 strips bacon
  • 1 c. Swiss cheese, grated
  • 4 eggs, lightly beaten
  • 1/2 tsp. salt
  • 1 very thinly sliced onion
  • 1/4 c. Parmesan cheese
  • 2 c. cream (light cream or half and half)
  • 1/4 tsp. nutmeg
  • 1 unbaked pastry shell (your own or purchase one)

    Preheat oven to 450°.

    Prick and bake pastry 5 minutes.

    Use quiche pan or standard pie plate.

    Cook bacon crisp.

    Remove from skillet.

    Pour off all but 1 teaspoon of fat.

    Cook onion in fat. Crumble bacon over crust with onion and cheese.
