- 2 Tbsp. butter
- 4 oz. ham, minced (6 oz. for 2)
- 6 shallots, minced
- 4 eggs
- 2 1/2 c. half and half or skimmed milk
- 3 oz. grated Parmesan cheese (6 oz. for 2)
- 3 oz. shredded Swiss cheese (6 oz. pkg. for 2)
- 2 baked pie shells
Directions

1Melt butter in skillet over medium heat.

2Add ham and onions; saute for 3 minutes.

3Set aside to cool.

4Combine half and half, eggs, salt and cayenne in mixing bowl and beat thoroughly.

5Spread cooked ham and onion mixture evenly over bottom of pie crust. Carefully pour egg mixture.

6Sprinkle with cheese.

7Bake 45 to 50 minutes in 375° oven.

8Serve hot or at room temperature.

9Makes 2 pies.
