Ingredients

  • 2 Tbsp. butter
  • 4 oz. ham, minced (6 oz. for 2)
  • 6 shallots, minced
  • 4 eggs
  • 2 1/2 c. half and half or skimmed milk
  • 3 oz. grated Parmesan cheese (6 oz. for 2)
  • 3 oz. shredded Swiss cheese (6 oz. pkg. for 2)
  • 2 baked pie shells

Directions

    Melt butter in skillet over medium heat.

    Add ham and onions; saute for 3 minutes.

    Set aside to cool.

    Combine half and half, eggs, salt and cayenne in mixing bowl and beat thoroughly.

    Spread cooked ham and onion mixture evenly over bottom of pie crust. Carefully pour egg mixture.

    Sprinkle with cheese.

    Bake 45 to 50 minutes in 375° oven.

    Serve hot or at room temperature.
